Tyrolean “Kaiserschmarrn”

Ingredients for 6 persons:

  • 4 tablespoons shortening
  • 5 Eggs
  • 230 g of flour
  • 375 ml of milk
  • 3 tablespoons of pine nuts
  • 1 pinch of salt
  • 1 tbsp icing sugar (for sprinkling)
  • 40 g of sugar
 

Preparation:

For the Tyrolean “Kaiserschmarrn” separate the eggs first and put them in two bowls. Mix the yolks with the sugar until fluffy. Slowly fold in the flour. Also stir in the salt and milk. Finally fold in the pine kernels. Whisk the egg whites until stiff and fold into the mixture.

Heat up a frying pan with oil and fill it up to 1 centimetre with the mixture. As soon as the underneath solidifies, turn it over once and let the other side cook. Tear the mixture into pieces using two forks and cook until golden brown. Sprinkle with icing sugar before serving.

Recipe tip: Elderflower syrup or compote taste delicious with the Tyrolean “Kaiserschmarrn”.
